Bacon Ranch Macaroni Salad

I was craving macaroni salad.  I am the only person in my house who eats it, so I rarely make it.  I decided to try a different version, Bacon Ranch, to see if I can persuade the family to give it a try.  I got the recipe from Pinterest (Pinterest User: LifeInTheLoftHouse.com) and my 10-year-old daughter asked if she could make it.  She whipped it up in no time. She only needed help with boiling the noodles.  She could probably do this part as well, but I have not relinquished boiling or frying to her, yet, for obvious reasons.  I asked my husband to take care of the noodle boiling, and she went from there.

The Bacon Ranch Macaroni Salad was a hit with everyone. We will definitely be adding this to our menu of optional sides, especially when we grill.

Recipe:

  • 1 package (12 ounces) tri-color rotini pasta
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 package (1 ounce) dry ranch dressing/seasoning mix
  • 1/2 teaspoon garlic powder
  • 1/2 cup milk
  • 8 slices of cooked bacon chopped (The recipe suggested using pre-cooked bacon, just threw in the microwave and done.  Best advice ever! Also, if you do not eat pork, just skip the bacon. Turkey bacon will not do this recipe justice).
  • 1 large tomato, diced (Most of the house does not eat tomatoes, so we left them out).
  • 1 can (4.25 ounces) sliced black olives, drained
  • 1 cup shredded cheddar cheese (We used ยฝ cup of cheddar cheese).

Instructions:

  1. Bring a large pot of water to a boil. Add rotini pasta and cook until al dente, about 8 minutes. Drain water. Rinse pasta with cold water to cool. Set it aside.
  2. In a large bowl, whisk together the mayonnaise, sour cream, dry ranch mix, garlic powder and milk. Add pasta, cooked bacon pieces, tomato, olives, and cheese to the bowl. Gently toss to combine everything.
  3. Cover and chill in the refrigerator for at least 2 hours before serving. (We ate it immediately, and the next day it was just as good).

Rainbow Ryders Hot Air Balloon Ride

You guys! Next to parasailing in Negril, Jamaica, this was one of the most adrenaline-charged experiences I was finally able to experience, hot air ballooning. I say finally, because my husband or anyone for that matter could not be talked into participating in this activity. My husband constantly told me that at least one parent had to stay on the ground to raise the kids.

Funny not funny.

My research on the company and safety stats convinced a girlfriend to go along with what I felt was a great idea.

From the moment I booked the ride, with Rainbow Ryders Hot Air Balloon Co. (RR), every human sense was stimulated.

An oversized basket, a giant balloon, fueled with hot-air, thousands of feet in the air, with 12 people inside, could we be any crazier? We were willing to see! I booked the hot-air balloon ride about three weeks out.  You had the choice of a sunrise or sunset ride.  We chose sunset, because getting up before the sun comes up over the horizon and baring the morning coldness was not anyoneโ€™s idea of an enjoyable start to a day.

There was no individual weight limit with RR, but they will ask what the total weight is for the individuals booking in your party.  They placed us in a basket according to the other 10 riders that rode in the same basket with us, to give the balloon an overall safe balance.

Per RR, there were other requirements that we needed know before we booked our ride, such as being able to get in and out of the basket (similar to getting on and off a horse), standing for three hours, since we did have to stand the entire time, no on balloon seating. Wear comfortable clothes and closed toed shoes.

We checked in one day prior, to confirm our attendance for the next day. We arrived one-hour prior to flight time on the day of the ride to get an assigned basket, pilot, and van.

The ride from RR headquarters to the launch-site was about 45 minutes.  Once the balloon chasers located an idea space for take-off, they began set-up.  Set-up took an additional 45 minutes.  We filled the time with a photo-op and observing the process of the crew inflating the balloon. They process is all manual, from pulling the basket out the back of a pick-up, unraveling the balloon to make sure it is flat and ready to be inflated with large fans.

In the air with Rainbow Ryders Hot Air Balloon Co.

Once the logistics were in order, it was time for take-off.  Nail-biting and wonder started to take over. However, the hot-air balloon ride was the most serene, relaxing, and enjoyable time that you can have at approximately 3,000 feet in the air. Surprisingly so quiet, just the sounds of whispering chatter from our balloon neighbors, and the sound of the fire fueling the balloon. Our pilot pointed out some landmarks and gave us some short personal stories about his flying experience over the last 30 years.

After about one hour and a half in the air, we prepared for landing. Landing was bumpy, but not rough. We skipped a few times, but our basket did not tip over, like we were warned could happen. There are small steps etched on the inside of the basket. We used those to climb to flat ground. We had a or few celebratory glasses of wine, and all the riders received flight certificates. Our balloon chasers met us at the landing site and chauffeured us back to the RR Headquarters. Overall, our experience was 10/10.

And yes, we are a little bit crazier since scratching hot-air ballooning off of our bucket list. Would not have it any other way!

Our total price paid was $390, for two riders, not including tip.

Have you been hot-air ballooning? Who were you able to talk into going with you? Tell me about your experience. If you have not been hot-air ballooning. would you try it?

01-My Invasive Ductal Carcinoma-Triple Negative Breast Cancer Diagnosis

After nearly a month of testing, I learned the results on January 26, 2023. I have Invasive Ductal Carcinoma-Triple Negative Breast Cancer (TNBC). It is stage 2 and grade 3.

Insert the classic Lifetime movie time rewind we see at the bottom of the screen. If you are not looking when it flashes, you are lost. Anyhow, approximately 30 days before official diagnosis, I discovered the lump in my right breast. I usually do my breast self-checks top of the month. Randomly on December 30, 2022, my husband and I were playing around, and I brushed against my breast. I felt the lump and I completely freaked out. I was used to feeling small, squishy, water-filled cysts because I have had those for years. I get them tested, along with my annual mammogram, and they are always benign.  This day was different. The lump felt different, hard, not moving at all, and a pretty good size. About the size of a small plum. I had not noticed it at all before this day, and of course I questioned myself tirelessly, how not? That is how prominent it was. My oncologist assured me. The lump might have just surfaced so I could finally feel it. It had been developing for quite some time. That STILL did not change my devastation.

I have cried more than I have ever cried in my entire life. This has all happened in just these last four months or so. And I still cry. After I had physically calmed down that evening, I snapped this photo. I could not believe my life was changing in an instant. In the photo above, I wore contacts and cried until they fell out. So, I had to put on my glasses. I wanted to capture who I was. I knew immediately I would not be the same person through this, years later, or if ever, beyond this experience.

Because of my diagnosis, I have learned A LOT about all things breast cancer. I will share just a fraction of what I have ingested. I have processed this information in a short time. Yet, I am learning more every single day. TNBC accounts for about 10-15% of all breast cancers. The term triple-negative breast cancer refers to the fact that the cancer cells do not have estrogen or progesterone receptors. The cancer cells also do not make any or too much of the protein called HER2. The cancer cells test “negative” on all three tests, thus triple negative. This cancer tends to be more common in women younger than age 40. I am 42. It is also more common in women who are Black. Lastly, it tends to be more common in women with a BRCA1 mutation. Although, TNBC can affect anyone! I fortunately DO NOT have the BRCA1 mutation, meaning I did not test positive for the hereditary gene.  Thank goodness for my daughter (sons as well).

My chemotherapy schedule is every week for the next three months. After that, it will be once every three weeks for another three months. A total of six months of chemotherapy. I will have surgery to remove the area where the tumor existed. Then, I will undergo radiation to eliminate any cells that may have been left behind.  The next year or so will be grueling, but lifesaving.  By the time I make this post public, I will be in week seven of 24 weeks of active treatment.

There are days when I do not feel strong. I am not the breast cancer warrior everyone expects me to be. That is ok.  If you are here, or know someone who is, it does not mean you or they have less faith. It means we are human. The next day you may feel like you can take on anything, with all the positive and good vibes radiating. When we need encouragement and comfort of all sorts.  Taking one day at a time, has been my motto thus far.

I am grateful that I caught my tumor in its “early” stage. My family and friends have been close and comforting.  My work team has been incredibly supportive. Everything about my treatment center is AMAZING.  I am grateful. There is an incredible fighting chance. Doctors are equipped with all the knowledge, medicine, and technology available these days.  Am I still scared, yes. Absolutely. It’s natural to feel this way. If you are reading this and are in a similar situation, rest in the unknown. If you know someone who is, let them rest in the unknown. As I mentioned earlier, you donโ€™t need to be positive all the time. It can be exhausting and honestly, it doesnโ€™t help. Feel all the feels, as you feel them. CANCER SUCKS and it is ok to feel it, think it, and express it.  At times, or even often, I do not feel strong enough to endure another moment. Yet, it is nothing short of amazing what our bodies can endure, even when you think it cannot.

The good news is that my tumor is already responding to chemotherapy!  When I found the tumor, testing and biopsies began immediately. During this time, my tumor more than tripled in size before even starting treatment. That is how aggressive this is.  I still have a long road ahead. Surgery and radiation are to follow. Now, the size of my tumor is less than half the size, to touch.

It has taken me three months to publicly talk about my diagnosis. Sharing it aloud with folks outside my close friends and family was challenging. It is still a struggle at times to speak about it. I do believe that I have this platform for a reason.

I am not going to scream from the rooftops about ensuring yearly routine mammogram screenings. However, I will quietly remind you, whenever it fits, do not miss your mammogram screenings. It is LITERALLY a matter of life and death!

My Favorite Perfumes That Last All Day

My favorite perfumes that last all day are Marc Jacobs and Versace perfume.

I am not a huge perfume wearer, more of a body spray type of gal but you can barely resist when you walk into a department store and the choices are plentiful.  Let us not talk about all the samples you leave with if you peruse all the cosmetic counters.

I set out on a quest to try all the samples I gathered and find my favorite perfumes that last all day, because it is nice to smell nice. And when you dish out the money that a bottle of perfume costs, you certainly want it to last all day. Plus, when I spritz my absolute favorite, Marc Jacobs Daisy Love- Eau So Sweet, my husband cannot stop saying how amazing I smell.

Marc Jacobs Daisy Love-Eau So Sweet

This is the thing with Marc Jacobs perfumes, they all smell the same to me, with each one having just a slight twist.

My favorite, Marc Jacob Daisy Love-Eau So Sweet is sweet, subtle, pretty and pleasant. You can certainly wear it as an everyday perfume.

My next favorite perfume is Versaceโ€™s Bright Crystal. This is my, โ€œwe are going out perfume.โ€  It is also sweet, with a bit of โ€œturn-upโ€, if you will. You are definitely โ€œin the streetsโ€ being a grown-up when you wear this one.

Versace Bright Crystal

My next favorite perfume, and the newest to my and Marc Jacobโ€™s Daisy Love perfume collection is, Marc Jacobs Daisy Love-Daze.

I read many reviews before making this last additional purchase, because I had no sample and one reviewer expressed, Daze smells just like the others but different.

When I received the bottle in the mail and tested it, I knew exactly what the reviewer intended to convey. Daze, indeed, smells like all the rest, so sweet but with a slight musk or woodsy note. This is one you wear when you feel like wearing it, if you know what I mean.

Marc Jacobs Daisy-Eau So Fresh Daze

So, in the department stores a bottle of designer perfume will easily run you $100+, if you are aiming for the big bottles.

In my research, Amazon has the exact same perfumes bottles for 25-50% less.  Be sure to purchase directly from the designer as oppose to a seller to avoid knockoffs.

If you would like to check out my favorite perfumes on Amazon, click the following links:

March Jacobs Daisy-Eau So Fresh Daze isnโ€™t available on Amazon just yet, but you can find it at Sephora.com or Ulta.com.

Perfume Application Tip: If you apply a moisturizer, such as lotion, prior to spraying perfume you give the perfume something to attach to. It lets allows the perfume to last even longer.

Building a Raised Garden Bed

Let the growing games begin!

This has been a thought in my mind for a few years.  After taking in gardening content for the purposes of growing food, attending classes, and stalking the amazing gardeners of Instagram, I am finally jumping out there with what I know to see what happens.

I ordered this raised garden bed on Amazon.  It was super easy to put together.  If I can harvest just one thing that is edible, I will be a happy woman.

As mentioned, I purchased this garden bed from Amazon.  This raised bed is not available directly through Amazon anymore, but there are a ton of options to choose from.

The pieces were packaged nice and secure.  Every piece was cut precisely, to allow the groves to slide into place.  There are no tools required to build the actual box.  You will only need a screwdriver to screw in the screws that attach to the decorative pieces on each corner of the raised bed.  I used a battery pack drill to do this, easy, but you can use a hand screwdriver with a little elbow grease.

The total build time took 22 minutes, from start to finish.  I built it alone, in my dining room.  No help is required.

This bed seems to be a great product and it gathers great reviews.  I paid $99.  The current cost of this specific raised bed at the time of this post is, $109.

This is where you can order the garden bed directly:  www.bestchoiceproducts.com

Added bonus: Free shipping, no minimum.

Do you have a home garden?  If so, what are you currently growing?  If not, what would you like to see me grow in my garden?

I hope you follow me along this journey.
